New year Strawberry Sauce Recipe
This strawberries sauce has only 4 ingredients. It is not only tasty but it is also a healing desert that will not raise your blood sugar levels. By adding a special ingredient by the name of Kudzu (white root similar to arrowroot), the sauce becomes thicker with a full velvet texture that melts in the mouth like whipped cream. No dairy or sugar are used in this preparation.
What is so nice about the kudzu is that it immediately affects your stomach, soothing and relaxing it while keeping your sugar levels from spiking up.
The Kudzu is an ancient Asian starch root that is used in the traditional Japanese and Chinese cuisine to thicken a dish, but also as a medicinal remedy for various conditions
Kudzu medicinal properties
For more than 2000 years, kudzu root has been used as a herbal medicine for the treatment of fever, acute dysentery, diarrhea, diabetes and cardiovascular diseases. Kudzu has many phytochemicals (These elements are capable of neutralizing the formation of free radicals in the body) with isoflavones which are weak plant estrogens.
Kudzu can help fight problems like diarrhea, constipation, and heartburn. It contains a certain amount of insoluble fiber, in addition to prebiotic compounds. These have been shown to help increase the density of the bacteria populations in the digestive tract. This is also related to a lower incidence of problems associated with the central nervous system.
The traditional Macrobiotic healing diet has been using Kudzu root not as a concentrated supplement but as a whole food that can be used in the kitchen for preparation of sauces, stirred fried vegetables and even soups.

Easy Strawberry Sauce Ingredients:
1 package of frozen strawberries or mixed berries
2 glasses of Apple cider juice
1 tsp of kudzu root for each glass of juice
Fresh strawberries or blueberries
For a thicker sauce use 2 tsp of kudzu and for a lesser consistency reduce the amount of the Kudzu. .
How to Make the Kudzu Strawberry Sauce:
- In a medium saucepan, combine 1 package of frozen strawberries, 2 glasses of apple cider juice
- Put the Kudzu in ¼ glass of cold water and mix well until it melts. Set aside for later.
- Pure the mixture of apple juice and strawberries into a deep saucepan. Place over medium heat and bring the mixture to a boil, stirring occasionally. The strawberries will release juice without any mashing required.
- Reduce heat and simmer for 10-15 minutes, stirring occasionally. Add the Kudzu mix and stir until the sauce thickens up. Remove from heat and cool to room temperature. Keep in mind sauce will thicken up slightly as it cools and even more after refrigeration.
- Serve the sauce in a small glass, and then before serving top it with fresh strawberries, or blueberries.
Refrigerate before serving.
